History of Rakfisk
Since the 1800s, our supplier has been catching trout in Valdres and processing it into Rakfisk through fermentation techniques perfected over the centuries. Rakfisk is a traditional Norwegian fish delicacy almost synonymous with the Valdres region in southern Norway, making us proud to call our product a true local invention created from old traditions that have survived the test of time.
Process of Rakfisk
Fermentation of food is the process of exposing the basic ingredients to enzymes and microorganisms that change the biochemistry of the food. The process is quite similar to the maturation of cheese. Fermentation gives the food higher nutritional value, a changed taste, and allows for easier digestion. To achieve the highest quality end result, the process is very slow and is done at low temperatures.
The temperature-controlled transport from the fish farming site to the production site in Valdres is an uninterrupted smooth process, and once the fish is on-site only custom made high-end equipment is used to guarantee the quality of the air, temperature, and hygiene.
When it comes to our raw product, the fish, only the freshest trout is selected and used. The fish is cleaned thoroughly before it is salted and put in layers in buckets. Then it is covered with brine before it is put away for maturation. This process relies upon both time and temperature, and the maturation will continue in the package up until the Rakfisk is eaten by the consumer world wide.
